The gastronomy of Peñaranda de Duero has no ambition to astonish. Its ambition is to nourish, to gather, to celebrate. It is a cuisine of honest ingredients, of seasonal rhythms, and of slow fire, one in which the roasted lamb and the wine are indispensable presences yet by no means the only players at a table that shifts and transforms with every turning of the year.
